After some further investigation, this doesn't look like an Xcode Cloud problem. The issue is with uploading the build to TestFlight. The uploads are stuck processing.

I created a Feedback for these stuck uploads on Friday. Last night all of the builds completed. No idea what the problem was but happy it got fixed.
