Just panicked a bit as saw a post about de-federating with no explanation of what it meant for day-to-day users and wondered if I was about to lose all my followers and followees and what I need to do to not lose it all.

Mastodon is based on 'federation' of instances. Think of your instance as the village you live in, which is connected to neighbouring villages by roads, which again are connected to further villages etc. /1
