What I've learned so far is to go to the web client, click on # Explore in the menu, search for the hashtag you want, then look at what search comes up with. Click the one you want if there are multiple options - it'll show an activity graph and how many people have been talking about that hashtag in the last 2 days. Once you're on the specific hashtag you want, click the icon next to the tag name that looks like a person and +.
It'll show up in your feed then.

@JustADon@mastodon.gamedev.place You can also click on a hashtag in a message in one of your feeds and jump straight to the messages talking about that tag, and then follow from there. Tusky doesn't have this type of process, from what I can tell. It may be a limitation with mobile clients, idk. I've been jumping on the web client here and there when I see a hashtag that I want to follow, and it's worked out great. I follow #UE5, which is how I saw your post this morning.
