AFAIK baiju is basically doing the same thing as Jamaican rum, which can get pretty intense and weird. Complex biochemical process that turns fermentation byproducts into aromatic esthers (among other things), possibly involving “muck pits” (to cultivate relevant bacteria/yeasts) and AFAIK possibly involving straight-up pouring acid into the fermentation vat (I assume that’s not really a common thing in Jamaica nowadays, but it wouldn’t suprise me with cheap baiju).
