My brain is boggled between going Cajun vs Mexican for this. Like... Cajun I gotta do a roux & add okra & shellfish meat & andouille sausage. Mexican it's different spices & chilies, then chorizo and probably chicken thigh? I just want something hella bold that can easily extend so for awhile I don't order anything.
