A more mathematical discussion of this approximation can be found at the link below (part of site to help someone try learn a bit of GR).
As it says there, this approximation assumes slow moving objects, which light definitely isn't!

Not that this is what Einstein did in 1911. He didn't have the full theory of GR at that time. He was really just relying on the "principle of equivalence".
