It knows what you've touched for the same reason it knows what you've clicked.
It knows your window size because that's how layout works.
It knows your language because your browser asks the server for stuff in your language.

However I hope some could be made more generic, and others could be on request only, e.g. exact angle, exact GPU version etc. I like Vivaldi and it's general approach with AI etc, but keen to be a little less distinct on the web. 😉
