Human shit is absolutely an animal byproduct, regardless of what the human ate to produce it.

A mother’s milk is considered vegan because (if) it comes with the mammal’s consent. Pretty much the same applies to human sperm. At least if a human explicitly allows you to take its shit for some use, it is absolutely vegan. But then there’s the question of whether shit is always vegan.
