Honestly, privacy isn’t that big of a priority for me when it comes to email because email is by its very nature not particularly private. If you want private email communication, you can use something like GPG to encrypt your correspondence, in which case your provider doesn’t really matter. If privacy is a huge concern, other protocols are better. Because of this, I use Fastmail for the huge number of email addresses you can use (I used to use Proton but they were very limiting in that regard).
