Took quite a bit of effort but I created a usable Gitlab CI/CD template to make container images using buildpacks without needing any Docker daemon. Yes it has limitations (only "trusted" builds; no extensions). But this setup does not require a DinD service in Gitlab which is slow and insecure. This template provides two base jobs which with only a tiny bit on config covers almost all our application images.
