Carrot Cake is the absolute proof that the Baking Fairy exists. You take ingredients that are unrelated to cake (I mean, grated carrot and crushed pineapple? Seriously?) This lumpy gloop that in no way resembles cake batter is spread across two cake pans. Some time during the 35 minutes in the oven the Baking Fairy replaces the mess with light, moist and tasty cake! Ultimately, of course, the cake part is just scaffolding for the cream-cheese icing which is the REAL reason anyone makes carrot cake. #baking
