The problem with Trek for this request is that it is too long. Also, you appear to want a serial or quasi-serial, rather than series? So that argues against TOS, TNG, or Voyager, which are highly episodic.
Firefly is a good, serial, relatively short watch through, IMHO. Babylon V is fun, but pretty long, though you can skip some of it to focus on the long Shadow War story.

@TerryHancock@realsocial.life yeah, I did leave off ST Voyager, I couldn't manage the last few seasons lol! but I did like some of the shadow stories in Babylon5, and I know some folks who totally went all in for the ending story arc there!
