More and more, the server brings a terminal to you. However, the custom is still that to signal you are ready to pay, you put your credit card on the bill (or inside the folio holding the bill, sticking out so it is visible). I sat for quite a while waiting to pay before remembering this step.

It's amazing because like, the American payment processors set all the rules that Europeans have to follow, but don't force so many places in the US to do the same
