Zankou Chicken was such a fixture for me in Los Angeles that when I moved to Northern California I had to figure out copycat recipes. And I did, for the most part (I never perfected the chicken tarna, but I knew that wasn’t going to happen without a spit and a lot of effort). It’s all a lot of work to do in a home kitchen, though. So I’ve tended to just wait and get extra pickles when visiting.

Last time I was in Los Angeles, I got Zankou, and it was bad. It hadn’t been good the time before, either. The pickles were beyond bad. Anyway I’ve just peeled about 3 pounds of turnips and beets and while I don’t want to do it again, the bright pink liquid and smell are already reassuring me, I’m going to. I got some store-bought toum which won’t be as good as mine, but will be almost as good as Zankou’s, and the local Falafel joint will take care of everything else.
