I was going to flippantly just say “No”
but I happened to be logged into Consumer Reports (yes I’m easily distracted) So, I looked at a few spec of stoves spanning ~$1200 - $7000 (GE,LG,Frigidaire,Dacor,Miele - not in order),and found only 240V 40 or 50A & no mention of humidity control … what stove is that available on?
I did find this: https://copperhome.com/products/charlie battery assisted 120V 12A! It has a dehydrate mode - so maybe 🤷♂️ $6000, replacement battery cost - not available 😲

@dxzdb as @GeekAndDad said in a separate reply it seems like combi-steam ovens are all in-wall anyways so I may have to give up on that dream for now. For inductive ranges using 120V (plus an integrated battery) in addition to the Copper there's also Electra.
