@hallasurvivor you use it to design filters and assess their properties by looking at the poles of their Z-transform. For example, conventions are usually set such that a causal filter is "stable" (does not produce infinite output from finite input) if none of its poles lie in in the unit disk. You can look up linear time-invariant systems for more informations.
