I wasn't expecting a vegan main from the Balkans but this is on the menu for tonight at my house (this is perhaps simply a product of my ignorance of food from this region, which is substantial) https://bakinghermann.com/tavce-gravce-macedonian-baked-beans/

    yum! (I might have overdone the parsley and mint. the chili peppers are inauthentic-- one is an ancho and the other is a guajillo 😆)

    @regehr I love this dish! I'm half Macedonian and have many fond memories of it. The recipe looks legit too, roux and all. If you get it right, you will have both very soft and very crispy beans, as well as everything inbetween.

    @regehr Easter Orthodox Christian fasting can include not eating meat, dairy, eggs. So it's not totally surprising that there are vegan dishes from the Balkans. (it's not part of the Balkans, but I found amazing vegan food in Romania on my last visits)
