@piggo @sa @Pineywoozle @lispi314 I once worked at an agroponics startup, and while I knew nothing about it, the resident experts there did converge on herbs being the highest profit crops for mom-and-pop sized indoor farming on hydroponics racks like this. (The startup had software so that growers could book sales in advance with local restaurants, and then plant/manage each crop in time to make those specific deliveries. The startup imploded, but not, AFAIK, because the idea is unworkable)
