I think I'll wait for alt.org to update to #NetHack 5.0.x rather than playing it on my own computer (no new macOS binary yet, and I prefer playing on a public server anyway).

So NAO has already updated to support #NetHack 5, but I think I'm still going to wait for at least one (inevitable) bugfix release before diving in. Trying to avoid spoilers in the meantime. https://www.alt.org/nethack/
