@mcmartin there's a few books for the 6809 in the Color Computer archived over at https://colorcomputerarchive.com/repo/Documents/Books/ if you're interested at poking around.
By the time of the m68k stuff people were starting to use higher level languages and operating systems, not so much interacting with the CPU directly (tho it was used in the sega genesis/mega drive). You'd probably be looking for pascal/delphi or C compilers for old mac os versions, unix, or os9 (not to be confused with mac os version 9).

@mcmartin the specific book I own isn't in the coco archive for some reason, but the internet archive has a copy at https://archive.org/details/Color_Computer_Assembly_Language_Programming_1983_William_Barden_Jr
