@sjolsen Put yeast in grape juice in a cool cellar, and you may produce delicious wine. Put the same yeast in honey water in an apartment that is too warm, and you will not get mead. You will get five gallons of liquid that smells and tastes like a toxic cleaning product. The guy at the brewing store will say, don't throw it out, let it age. But in two years, it will taste awful. So, be cool! (Says the Bible.) Don't let yourself get overheated, or you will end up with a carboy full of yuck.
