Hey, thanks to everyone who responded or boosted this! Learning about the EIA-608 standard was a helpful lead. I found a standalone encoder on ebay but it was pretty far out of budget. Think I'm going to bite the bullet on the capture and conversion route. Editing and organizing clips would certainly be a lot easier. I am worried about the digital conversion process harshing the analog vibe so there will probably be more questions on framerate and fidelity to come.
