So, I've abandoned the idea of running an XMPP server and made the switch to Matrix... I'm running my own Matrix server using Tuwunel and other components inside Docker, and even have the ability to do both 1-to-1 and group calls that are end-to-end encrypted. Sure, XMPP is nice and lightweight but group voice/video was a bit of an issue with the setup I was using.
