Ended up replacing #PopOS with #Fedora (KDE Plasma) on the gaming PC today.
Could not be happier! Dual screen, mouse focus, fullscreen... Everything I struggled with gaming on Pop!_OS works out of the box.
Not sure if its because of Fedora or KDE Plasma.
Wasn't to much hazzel setting up proprietary Nvidia drivers either.

I stayed up late last night just tinkering with this installation and KDE Plasma is really growing on me. I still think Gnome gives a better user experience and looks better, at least on a laptop, but the flexibility in KDE Plasma is pretty awesome! Also installed a bunch of games, some that I struggled with on Pop!_OS and some that didn't run at all. On :fedora: :kde: they just run perfectly! #LinuxGaming
