@rexbron Oooh. So dahi curd is what we would refer to as yogourt. But fromage blanc is cottage cheese, which is what we would also refer to as curd in anglo Canada?
In Switzerland they have séré, which i think is a type of fromage frais? One of my favourite foods there, which I've never found the equivalent of in Canada. It gets translated as quark. But quark in Canada is grainy, while séré is very smooth and rich. It probably also would work in that recipe.

@PapyrusBrigade yeah! But in the context of idly, I think you need it to be smooth to make the dough. I just find it funny that whomever was translating didn’t have the context. And imagine trying to use cheese curds would be… dry. I’ve never heard of quark (outside of physics), will try!
