Do you really think some checkbox will stop them? How would you ensure that? Never forget it’s Micro$oft. That company was founded on lies.
Better pack your stuff and run. Maybe head over to Codeberg, or maybe to your own infrastructure. Did that twice (Github–>GitLab–>Codeberg) with a few (tiny) repositories, it’s doable.
