@EpiphanicSynchronicity OCR stuff? Abbyy Finereader comes to mind. It might not be exactly what you’re after but check it out. Soon as I’ve finished playing video games and having dinner I’ll do some more looking.

@dhry When you hit a hotkey (option-shift-2 by default), TextSniper pops up a special mouse cursor that lets you select and copy as plaintext any words, numbers, etc. you can see on your screen, whether they could otherwise be copied or not. It’s ideal for copying text out of an image, but I also use it to copy text without picking up underlying hyperlinks, formatting, etc. Abbyy Finereader looks like it does something different that’s related to PDFs
