Great! Here goes: prepare lentils w/package directions; set aside when done. Saute chopped onions, celery, carrots (I use frozen) in olive oil in large skillet until nearly cooked; push to outer edges of pan. Add a little more oil to center of pan & once it's heated, add whatever mixture of spices you like & cook for a few minutes. @DragonDrop pan & mix everything well, scraping the pan. Add the prepared lentils & additional chicken broth (I use unsalted) to desired consistency. Cook a little more & then add 1 small can of tomato sauce for additional flavor & a nice color to the dish. Add a 15 ounce can of diced potatoes. Up to this point, I used Medium heat; now, change to a Low setting for about 30-40 minutes. If the mixture gets too dry, add a little more broth. Serve in a bowl, topped w/fresh cilantro leaves. Enjoy!😋
