@perkinsy you could definitely eat the one on your plant as is or you could let it put on more size. As Ganga says, pick whenever you like. When I got a glut of capsicums, I loved to stuff them with a rice, browned beef mince and passata mixture seasoned with paprika, and bake them at 180C until the capsium softens. A motz cheese cap is tasty.
